To lock a chat go to Settings->Privacy and Security->Passcode Lock and enable it. Once you create a passcode and enable it, you will be able to lock and unlock your chats by tapping on the lock icon at the top right of the app. Speaking of multiples, Telegram allows you to upload additional profile photos. You can use this to, for example, keep your personal and professional lives separate on Telegram without having to use another messenger app. If you do not want this to happen and want Telegram to keep running in the background to send you notifications in real-time, you can head over to Settings/ Notifications and Sounds/ Keep Alive Service and turn it on.
