给npy的奶油蘑菇汤:
基底------
培根煎至出油,变脆捞出、切碎备用。
培根油中加入口蘑片,中火煎至焦黄,捞出少量备用。
同时备shallot切丁加入煎香,不要过分焦(颜色方向考量,不宜过于深色。)
新鲜培根切小条加入,煎至出水变熟。
Deglaze前加入香料blend,融合味道。
分解------
离火用少量面粉增稠,记不要让面粉变色。迅速高火加入白兰地deglaze,后奶油入锅。开锅后调节汤基底质感。
入烤箱90-110度保温至上桌。
出锅------
出锅前:加入新鲜黑椒、培根碎混合。
装盘:装盘后加入干parsley或西芹叶,点缀更多培根碎或煎金黄的蘑菇。(照顾颜色对比)
